The Lady’s Kisses are sweets originating from Piedmont known worldwide. Two spheres with a thin layer of cream in between. Today, having a pack of pistachios at home that was about to expire and a jar of pistachio cream, I thought of making the Pistachio Lady’s Kisses version. The recipe is very simple; everyone can try their hand at this preparation with delicious results.

Ingredients
- 3/4 cup pistachios (shelled)
- 1/2 cup butter
- 1 pinch Salt
- 3/4 cup all-purpose flour
- 5.3 oz spreadable pistachio cream

Steps
Place the pistachios with the sugar in the mixer and start grinding until they become sandy. Add the butter, give a small stir, and finish with the flour and a pinch of salt. Form a dough, wrap it in plastic wrap, and let it rest in the fridge for 15 minutes.
While the dough rests, preheat the static oven to 340 degrees Fahrenheit. After the resting time, take 4-5 pieces from the dough and roll them into sticks. Use a knife to cut small portions and form balls the size of a cherry. To make them all the same size, you can use a melon baller. As you make them, place them spaced on the baking tray covered with parchment paper and let them rest in the fridge for another 15 minutes. After the rest in the fridge, bake in the middle rack and cook for 18 minutes. Once cooked, turn off the oven and let them cool. With a teaspoon, put a little pistachio cream on one shell and close the kiss with the other shell. Place all the Pistachio Lady’s Kisses on a tray and store them in the fridge to keep the cream solid.
