Ingredients

  • 2 1/4 cups all-purpose flour
  • 3/4 cup sugar
  • 3 eggs (medium)
  • 9 tbsps butter (melted)
  • 1 pomegranate (about 5 oz of juice)
  • 1 packet baking powder
  • 1.75 oz 70% dark chocolate
  • 1/4 tsp fine salt
  • 1 tbsp powdered sugar (for decoration)

Steps

  • Turn on the static oven to 350°F. Pour sugar and eggs into the bowl. Beat for 5 minutes using the electric whisk until you get a creamy mixture. Add the cooled melted butter and incorporate it using a spatula or whisk, also add the pomegranate juice, gently mixing, and a pinch of salt. Gradually add the sifted flour and baking powder to the mixture.

  • Once you have a smooth mixture, pour it into the pan lined with parchment paper. Level it out, cover the surface with chopped chocolate, and bake. Cook in the middle rack for 40 minutes. Before taking it out, slightly open the oven door to let the steam escape slowly, then remove the cake, and once cooled, sprinkle with powdered sugar.
