Potato and Taleggio Pancakes are an easy and relatively quick main course or appetizer. They are made by grating the potatoes into sticks, draining excess water, and mixing with flour, Parmesan, eggs, and Taleggio, which I added since I had a piece in the fridge. Steps
Peel the potatoes and grate them into sticks, allow them to drain their water, squeeze, and pat dry with paper towels. Place the potatoes in a bowl with diced Taleggio, flour, grated Parmesan, salt, and pepper.
Add the eggs and mix the batter well. Place mounds of batter onto parchment paper cut into squares. Heat the oil in a frying pan and when hot, flip the squares in and allow the paper to detach. Fry a few at a time, coloring them on both sides. As they are ready, place them on paper towels and serve hot.

Absolutely, at 200°C (392°F) for 10 minutes on one side and another 10 on the other. However, don’t expect the same crispiness.
