Potato and Taleggio Pancakes

Potato and Taleggio Pancakes are an easy and relatively quick main course or appetizer. They are made by grating the potatoes into sticks, draining excess water, and mixing with flour, Parmesan, eggs, and Taleggio, which I added since I had a piece in the fridge. For easy preparation, I placed the pancakes on parchment paper, which I then flipped into hot oil for a crispy finish.
