Ingredients

  • 1 red Tropea onion
  • 3 friggitelli peppers
  • 4 zucchini
  • 1/3 cup sun-dried tomatoes
  • 1 eggplant (long)
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp dried oregano
  • 1/2 tsp fine salt
  • 1 tsp sun-dried tomato pesto (Capuliato)
  • 1/4 cup Parmigiano Reggiano PDO (grated)

Steps

  • Pour the oil into a pan with the sliced onion. Add all the chopped vegetables, the peppers, zucchini, sun-dried tomatoes, and dried oregano, and let them sauté for a few minutes.

  • Also add the capuliato, salt, and let cook on low heat until the vegetables wilt. Once cooked, let them cool. Preheat the oven to 390 degrees Fahrenheit. Roll out the puff pastry leaving its paper underneath, cover with the vegetables, and sprinkle with grated Parmesan.
