Ingredients

  • 1 Tropea red onion
  • 3 friggitelli peppers
  • 4 zucchinis
  • 1.8 oz sun-dried tomatoes
  • 1 eggplant (long)
  • 2 tbsp extra virgin olive oil
  • 2 tsp dried oregano
  • 0.5 tsp fine salt
  • 1 tsp sun-dried tomato pesto (Capuliato (crushed sun-dried tomato))
  • 4 tbsp grated Parmigiano Reggiano PDO (grated)

Steps

  • Pour the oil into a pan with the sliced onion. Add all the vegetables cut into pieces: the peppers, the zucchinis, the sun-dried tomatoes and the dried oregano, and let them brown for a few minutes.

  • Also add the capuliato (crushed sun-dried tomatoes), the salt and let cook over low heat until the vegetables have softened. Once cooked, let cool. Preheat the oven to 392°F. Roll out the puff pastry sheet keeping its paper underneath, spread the vegetables on top and sprinkle with grated Parmigiano Reggiano.

  • Roll up using the paper as a guide and, with a knife, cut into slices about 13/16 in. Place them on a baking sheet lined with parchment paper, bake for 30 minutes. Remove from the oven and serve hot or warm the Puff Pastry Rolls with Vegetables.
