The oven-baked pumpkin Cordon Bleu stuffed with ham and cheese is a very easy main course and a diversion from the usual meat. Basically, it’s a cutlet where instead of meat we use pumpkin, and after grilling it, we stuff it, bread it, and cook it in the oven or fry it, each person can choose the type of cooking.

Ingredients
- 8.8 oz pumpkin
- 1/2 cup breadcrumbs
- 1/3 cup flour
- 1 egg (medium)
- 2.1 oz cooked ham (sliced)
- 2.1 oz fontina cheese (sliced)
- 2 tbsp extra virgin olive oil
- 1/2 tsp fine salt

Steps
Place the pumpkin on the cutting board and use the knife to remove the seeds and peel. Cut thin slices using a mandoline or knife. For this recipe, it is better to use the central part of the pumpkin slice, setting aside the ends for other recipes. Grill the pumpkin slices for a few minutes to soften them.
Once cooled, lay ham and fontina on a slice and close with another slice (like a sandwich). After this, dip the stuffed pumpkin slices in flour.
Then dip them in the beaten, salted egg and finally in breadcrumbs, pressing a little with your hands. Place them one by one on a baking sheet covered with parchment paper and drizzle a little oil on each. Bake at 356°F and cook for 20 minutes. With these quantities, you will get 8 Cordon Bleu.
