Romantic Tart for Valentine’s Day

Ingredients

  • 2 1/2 cups all-purpose flour
  • 7 oz butter (soft)
  • 1/2 cup powdered sugar
  • 1 egg (medium)
  • 1 egg yolk
  • 2 pinches fine salt
  • 1 vial lemon flavor (or grated zest)
  • 1 vial vanilla flavor (or vanilla pod)
  • 10 1/2 oz raspberries
  • 3/4 cup sugar
  • 1 tsp lemon juice
  • 1/4 cup ricotta cheese

Steps

  • Prepare the shortcrust pastry by mixing the soft butter with the powdered sugar in a bowl. Add the eggs, the flavors with a pinch of salt, and finally the sifted flour. Knead quickly to avoid warming the dough. Shape it into a flattened block, wrap it in parchment paper, and let it rest in the fridge for 15 minutes.

  • Quickly wash the raspberries, place them in a nonstick pan with the sugar and the juice of half a lemon. Stir and once the sugar has melted, continue on low heat for another 5 minutes. Once it reaches the right consistency, like a jam, turn off and use a sieve and spoon to discard the seeds.

  • Pour the filtered sauce into a bowl and mix it with the ricotta. If you like, you can sweeten it a bit more by adding 2 teaspoons of powdered sugar, it’s up to you. Preheat the static oven to 355 degrees. Roll out a disc of shortcrust pastry on parchment paper, about 1/4 inch thick, and place it in a 9.5-inch springform pan, leaving a 1/2 inch high edge. Prick the bottom and pour in the cream.
