Among the many traditional recipes of my city, we also find this one, the famous Silk Handkerchiefs, translated… silk handkerchiefs. Essentially, they are very thinly rolled square lasagna sheets made with flour and kneaded with few eggs and water. For the dressing, Genoese Pesto is used, prepared with Prà basil, which is the best. I want to remind you that basil in dialect is called Baxaicò. Ingredients
- 1 2/3 cups all-purpose flour
- 2 eggs (medium)
- 1/2 tsp fine salt
- 1 1/3 tbsp water
- 1 tbsp extra virgin olive oil
- 10.5 oz Genoese pesto
- 2 potatoes
- 1.75 oz green beans, frozen, cooked, boiled
- 2 oz pine nuts

Steps
Pour the flour onto the pastry board and form a well. Slip the eggs, oil, and salt in the middle. Start kneading, adding water as needed. When the dough is smooth, form a ball.
Let the dough rest 30 minutes covered with a cloth. Divide the dough and start rolling out the sheets with a pasta machine or rolling pin. Start from the 1st notch, folding the strip into three. Pass to the 4th notch, folding in two, and finish in the penultimate without doubling it. The strips should be almost transparent. Cut them into squares and keep them spaced on a cloth.
Cook the green beans in salted boiling water while in another pot, place the sliced potatoes in cold water with the addition of 1 tablespoon of oil, bring to a boil, salt, and add four or five handkerchiefs. A few minutes, keeping them mixed, and with a skimmer or spider, take them out and keep them warm with a drop of cooking water. Once finished, add the green beans, the potatoes, and dress with plenty of Genoese pesto. Finish by decorating with toasted pine nuts.
