Spaghetti alla San Gennaro

The Spaghetti alla San Gennaro is a Neapolitan recipe dedicated to the patron saint, and it is said to have been the favorite dish of Prince De Curtis, the great Totò. Ingredients

  • 7 oz spaghetti
  • 1.5 oz stale bread
  • 2 cloves garlic
  • 0.7 oz anchovies in oil
  • 1 tsp dried oregano
  • 3.4 tbsp extra virgin olive oil
  • 6 leaves basil (fresh)
  • 1 tbsp coarse salt (for pasta water)

Steps

  • Put a pot of water to boil for cooking the spaghetti. Slice the stale bread and rub the slices with 1 clove of garlic cut in half. Cut the bread into cubes and toast it in a pan with its garlic and 20 ml. of oil. As soon as it colors, keep it warm in a bowl and discard the garlic. In the same pan, pour the remaining oil, anchovies, the other clove of garlic, and oregano. Over moderate heat, melt the anchovies, then turn off.

  • Once the water boils, salt it and add the spaghetti. Drain them 2 minutes early compared to the cooking time indicated on the package and transfer them to the pan with the sauce. Turn on the heat and stir to combine, pour a ladle of pasta cooking water over the spaghetti to better mix the ingredients. Turn off and add the toasted bread, tossing the pan. Do not add salt. Flavor with torn basil leaves and serve.
