Swedish Potatoes with Lard and Herbs

A very tasty and quick recipe, Swedish Potatoes with Lard and Herbs are a popular dish in Swedish cuisine. The ingredients to prepare this recipe, as you might guess from the title, are few and simple: potatoes, butter, chopped herbs, lard or bacon, then everything goes in the oven. Served hot, they are irresistible!

Ingredients

  • 2 white potatoes
  • 2 tbsp butter
  • 3.5 oz lard (sliced)
  • 1 clove garlic
  • to taste roast herbs (or fresh such as rosemary, sage, bay leaf)
  • 0.07 oz fine salt

Steps

  • Wash the potatoes thoroughly to remove any soil residue. Dry them and without peeling, skewer them at the base (lengthwise) with a skewer inserted at 0.4 inches from the base. This is to stop the knife, allowing you to slice without cutting through completely. Make slices spaced 1/5 inch apart.

  • Chop the herbs along with the breadcrumbs and a bit of salt and season the slices between each cut. Add the chopped lard pieces. Melt the butter and brush it over the potatoes. Place everything on a baking tray lined with parchment paper. Add some sprigs of rosemary, sage, bay leaf, and some butter flakes. Bake in a preheated oven at 390°F and cook for 1 hour. Occasionally, baste the potatoes with the pan juices using the brush to keep them moist. Serve the Swedish Potatoes with Lard and Herbs piping hot.
