Sweet Ravioli with Dried Fruit

Every year, after the Christmas holidays, we end up with lots of bags of dried fruit and nougat. A way to recycle it is by chopping it and adding a few other ingredients to bring it to life in another form. These Sweet Ravioli with Dried Fruit are delicious, they seem very sweet but are balanced with the dough which is prepared without eggs, milk, butter and has very little sugar. Ingredients

  • 4 cups all-purpose flour
  • 4.7 tbsp corn oil
  • 4.7 tbsp extra virgin olive oil
  • 1/2 cup white wine
  • 1.4 tbsp sugar
  • 2.3 oz white nougat
  • 3.5 oz almonds
  • 3.5 oz dried figs
  • 1.75 oz 50% dark chocolate
  • 1.1 oz corn flakes
  • 10.5 oz jam (grape or Scrucchiata grape)
  • 1 egg yolk
  • 2 tbsp milk
  • 1.4 tbsp brown sugar

Each cooked ravioli weighs 53 g.

Steps

  • Pour the extra virgin olive oil mixed with corn oil, the lukewarm white wine with dissolved sugar into a large bowl. Gradually add the sifted flour and, as the dough begins to firm up, finish kneading on the pastry board. Cover with plastic wrap and let it rest for 30 minutes.

  • Pour the crushed corn flakes and crumbled nougat (place them in a bag and crush with the bottom of a glass), chopped chocolate, chopped dried figs, toasted and chopped almonds, and finally the grape jam into the bowl. Mix and combine all ingredients.

  • Preheat the static oven to 356°F. Take the dough and roll it out with a rolling pin or with a pasta machine to a thickness of 1/16 inch. Cut rectangles 5.5×2.75 inches and place a teaspoon of filling (the size of a walnut) on one side. Fold the dough to form a square, pressing well on all sides. With the cutter, press and cut the ravioli. Place them gradually on the tray covered with parchment paper. In a small bowl, mix the egg yolk diluted with milk, brush each ravioli and sprinkle with brown sugar. Bake halfway up and cook for 20 minutes. Remove from the oven and let cool.

Storage and Tips

Sweet Ravioli with Dried Fruit should be stored in a sealed bag and kept cool. If you can’t find grape jam, you can substitute it with mixed berry or blueberry jam.
