Tiramisu Tart with Chocolate Shavings

Ingredients

  • 2 cups All-purpose flour
  • 1 egg (medium)
  • 1/2 cup butter (cold from fridge)
  • 1 tsp lemon zest (grated)
  • 1/2 cup brown sugar
  • 1 vial vanilla essence
  • 1 pinch fine salt
  • 1 cup mascarpone
  • 1/2 cup powdered sugar
  • 3/4 cup whipping cream (vegetable)
  • 1 egg yolk
  • 2 tbsp unsweetened cocoa powder
  • 1 espresso cup coffee (strong)
  • 1 oz 70% dark chocolate (shaved)

Steps

  • Place the sifted flour and cold butter pieces in the stand mixer. Start the sanding process with the paddle attachment, and once it appears crumbly, add the sugar, a pinch of salt, vanilla aroma, whole egg, and grated lemon zest.

  • Knead using the hook and continue until a dough ball forms. Wrap it with cling film and keep it in the fridge for 30 minutes.

  • In the meantime, while the crust rests, pour the powdered sugar and egg yolk into a bowl. Mix with the whisk and when a cream forms, add the mascarpone and cream. Continue whisking until well thickened, then sift in the cocoa to avoid lumps. Mix and keep in the fridge until ready to use.

  • Preheat the oven to 356°F in static mode. Roll out the crust into a disc 1/8 inch thick and place it in a pan lined with parchment paper. Cut a strip of the same thickness, 3/4 inch tall, for the edges. Prick the bottom and edges with a fork and bake at medium height. Bake for 20 minutes, checking.

  • Once baked, brush the shell with a cup of strong coffee. Fill with mascarpone cream, level, and to make it even more delicious, decorate with chocolate shavings. I used the remaining crust to decorate by cutting hearts, once baked, I covered them half with melted chocolate and once dried, placed them for decoration. Serve the Tiramisu Tart with Chocolate Shavings cold and keep refrigerated for storage.

Storage

Store in the fridge covered with cling film and for no more than 3-4 days.
