- 5 oz canned tuna in oil
- 3 eggs (hard-boiled)
- 2 tbsps salted capers (desalted)
- 3 salted anchovies (desalted)
- 1 tbsp extra virgin olive oil
- 1/3 cup beef broth (from veal cooking)

Steps
Hard-boil the eggs by placing them in cold water and cooking for 8-10 minutes after boiling. Let them cool in cold water, then peel them. Break them into pieces in a bowl, adding the drained tuna, capers, and anchovies shaken off of salt (they should not be rinsed under water or they will become mushy). Pour in the extra virgin olive oil and start mincing using an immersion blender. Continue blending, diluting with the filtered meat cooking liquid until a cream is formed. For those who prefer a chunky version, use a mezzaluna to chop, leaving the ingredients in pieces. Serve the Traditional Tuna Sauce by pouring a few spoonfuls over the veal slices and decorating with capers.
