The Tzatziki sauce is a Greek preparation based on yogurt, cucumbers, garlic, and herbs like mint. It is used as a fresh dressing for salads or on bruschetta or meats. The ideal yogurt should be Greek, but I prefer to use regular low-fat or whole yogurt. As for variations, everyone adds what they prefer. Ingredients
- 1 cucumber
- 200 g Greek yogurt
- 8 leaves mint
- 2 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 1 clove garlic
- 2 g fine salt
- 1 pinch pepper
- 1 tbsp chopped pistachios (optional)

Steps
Use a peeler to remove the cucumber skin. Grate it very finely, salt it, and let the obtained pulp rest in a strainer for an hour. During this time, keep it in the fridge.
After the time has passed, squeeze well to remove all the liquid. In a bowl, pour the oil and mix it with the lemon juice. Add the garlic clove without the core and grated, the Greek yogurt or a whole or low-fat yogurt, and the cucumber pulp.
If you like, you can add the chopped pistachios or a tablespoon of sesame seeds, but that’s my variation because I love the crunch. Chop and add the mint leaves, salt, and pepper. Mix well, and with this delicious and fresh Tzatziki sauce, you can dress your salad or crudités for 2 servings. If not used immediately, store it in the refrigerator.
Storage
Tzatziki Sauce should be stored covered with plastic wrap in the fridge for no more than 2 days.
