Ingredients

  • 3/4 cup Venus black rice (whole)
  • 3.5 oz smoked salmon
  • 1 shallot
  • 4 tsp extra virgin olive oil
  • 1 tbsp Genoese pesto (for final decoration)

Steps

  • In a pot, pour 2 1/2 cups of water, bring to a boil, season with salt, and add the rice. Cook for about 40 minutes, stirring occasionally, until all the water is absorbed. In a pan, pour the oil, add the thinly sliced shallot, and let it brown over low heat, being careful not to burn it.

  • Add the smoked salmon pieces and the rice. Stir, let it flavor for a few minutes, plate it, and decorate with drops of Genoese pesto.
