Ingredients
- 2 1/4 cups all-purpose flour
- 3 eggs
- 1 1/8 cups sugar
- 8 oz carrots (net weight, peeled)
- 1/2 cup vegetable oil
- 1 orange (zest + 1/3 cup juice)
- 1 lemon (zest + 2 tbsp juice)
- 1 packet baking powder
- powdered sugar (to taste)

- Bundt Pan 9-9.5 inches
- Hand Mixer or stand mixer
- Citrus Juicer
- Grater
- Blender
Preparation
Grate the zest of the orange and lemon. Squeeze the juice and weigh the indicated quantity (1/3 cup of orange, 2 tbsp of lemon).
Peel the carrots, cut them into pieces, and blend them in a blender with the vegetable oil until a puree is obtained.
Using a hand mixer, whisk the eggs with the sugar until they are fluffy and light.
Continue to mix while adding the carrot puree and the citrus zest.
Then add the orange and lemon juice, the sifted flour, and the baking powder.
Mix well without deflating the mixture and without creating lumps, you will get a very soft and fluid batter.
Grease the mold with a non-stick spray, or butter and flour it. Pour the batter into it using a spatula (1).
Place the cake in a static oven at 350°F and bake for about 40 minutes (2). Adjust the times based on the oven’s characteristics and the shape of the mold, always remember to do the skewer test to ensure it is cooked.
When done, remove from the oven and let cool, then invert the bundt cake onto a plate. Level the base with a knife if necessary.
The ACE Bundt Cake is ready, before slicing you can sprinkle it with powdered sugar if desired.
Tips and Notes
Use organic oranges and lemons, or at least untreated on the surface.
You can make the dessert in a classic round mold, in a rectangular loaf pan, or make muffins (about 20 minutes of baking time).
The bundt cake stays soft for several days, stored in a cake dome.
