Ingredients

  • 1 sheet puff pastry (rectangular)
  • 2 apples
  • 1 tbsp sugar
  • lemon juice
  • 1 pinch ground cinnamon
  • 1 tbsp apricot jam (or other jam)
  • amaretti (3-4, crumbled)

Tools

  • Baking Tray

Preparation

  • Peel the apples, remove the core, and cut them into small pieces.

    Put them in a pan, add a tablespoon of sugar, the juice of about half a lemon, its grated zest, and a pinch of cinnamon.

  • Stir and cook the apples over medium-low heat for 10-12 minutes, until they are soft (1).

    Transfer them to a bowl and let them cool.

  • Unroll the pastry and divide it into 6 equal rectangles.

    Brush the center with a thin layer of jam and sprinkle with a handful of chopped amaretti.

    Place a spoonful of cooked apples on each rectangle (2), then roll up the pastry and seal the ends well with your fingers.

  • Place the bundles on a baking tray lined with parchment paper (3). Make cuts on their surface to release excess moisture.

    If you like, you can brush with a beaten egg or some milk.

  • Place the tray in a static oven at 374°F (or 356°F fan) and bake the bundles for 15-20 minutes, until puffed and golden.

    The apple and puff pastry bundles are ready, serve them warm, dusted with powdered sugar if desired.

Tips and Notes

You can use different varieties of apples; in this case, I chose Golden ones.

You can use apricot jam or another of your choice.

Crumbled amaretti help absorb some of the liquid released by the apples. If you don’t have them, you can replace them with dry cookies or ladyfingers.

If you don’t consume them immediately, you can store the bundles in the refrigerator and reheat them in the oven when needed.
