Ingredients

  • 1 3/8 cups all-purpose flour
  • 1 egg (medium)
  • 7 tbsps butter (softened)
  • 1 apple
  • 2 oz oz walnuts (ground into flour)
  • 3 oz oz walnuts (chopped into pieces)
  • 1 tsp baking powder
  • vanilla extract (to taste)
  • 1 pinch salt

Tools

  • Baking tray
  • Parchment paper
  • Stand mixer
  • Bowl
  • Food processor

Preparation

  • Using the food processor, finely chop 2 oz of shelled walnuts until you get a flour.

Chop approximately 3 oz of walnuts with a knife to get pieces.

Peel the apple, remove the core, and cut it into small cubes. Place it in a bowl and sprinkle with a few drops of lemon juice to prevent browning.

  • Using the stand mixer (or a food processor), mix the softened butter with the sugar until creamy.

Add the egg, a pinch of salt, and a teaspoon of vanilla, to taste.

  • Combine, then add the flour, baking powder, and 2 oz of finely ground walnuts.

Mix, and finally add the apples and allow them to distribute. You’ll get a very soft but workable dough.

  • With the help of a teaspoon, form balls and roll them in the chopped walnuts to coat them.

Place them on a baking tray covered with parchment paper, keeping them slightly spaced. Use more trays if necessary.

  • Place the cookies in a static oven at 355°F (or convection oven at 340°F) and bake for about 20 minutes. Adjust the time according to your oven, keeping in mind that the cookies will remain soft.

  • Apple and walnut cookies are ready, let them cool completely and dust with some powdered sugar if desired.
