Notes and Tips
The muffins stay soft for 2-3 days, in a closed container, kept in a cool place.
You can use plain, vanilla, or lemon yogurt. Remove it from the refrigerator at least 20-30 minutes before using it, so that it is at the same temperature as the other ingredients.
You can omit the honey, increasing the amount of sugar to 80g. You can replace the oil with 60g of melted butter.
