Advice and Variations
You can replace the ricotta with robiola or with more béchamel sauce.
You can omit the cooked ham, or replace it with speck cut into slices or strips.
You can cook the crepes in a 9.5-inch pan (as I did) or in a smaller 8-inch one. You can fold them into a wallet or roll them.
If you have any left over, you can freeze them in small portions and reheat them when you need them.
