  • to taste breadcrumbs

Preparation

  • Clean the asparagus by removing the end of the stalk and wash them under running water.

    Boil them in slightly salted boiling water for about 5 minutes (they should remain firm). Drain them and dry them with kitchen paper.

  • Beat the eggs in a bowl. Pour some tablespoons of breadcrumbs in another bowl, add a bit of Parmesan, a pinch of garlic powder, and a handful of chopped parsley (or other dried herbs) (1).

  • Dip the asparagus in the eggs, then roll them in the flavored breadcrumbs (2). If you want a thicker and crunchier crust, I recommend repeating the operation a second time.

  • Place the breaded asparagus on a baking sheet lined with parchment paper, without overlapping them, and lightly drizzle them with olive oil.

    Bake them in a fan oven at 374-392°F for 15-20 minutes, until they are nicely golden.

    If you want to use the air fryer, place them directly in the basket (with or without parchment paper) and cook them at 374°F for about 10 minutes (3). You can increase the temperature to 392°F in the last minutes if you want them crunchier.

I recommend using slightly thick green asparagus… thin ones are not suitable for this preparation.

If you have leftovers, you can store them in the fridge for 1-2 days and reheat them as needed.

You can flavor the breadcrumbs with herbs and spices to your liking, you can omit the cheese if you don’t like it.
