Ingredients
- 1.3 lbs chicken breast
- 4 zucchini
- 0.5 cup cherry tomatoes
- Half red onion
- breadcrumbs
- extra virgin olive oil (or seed oil)
- herbs (to taste)

Preparation
Wash the zucchini, trim them, and cut them into rounds. Wash the cherry tomatoes and cut them in half. Clean the onion and slice it into rounds.
Place the vegetables in a bowl, season with a pinch of salt and a drizzle of oil.
Take the chicken breast and slice it into strips or fillets. Coat it with oil on all sides, then coat it in breadcrumbs. If desired, you can season the breadcrumbs with dried herbs or spices.
Line a large baking tray with parchment paper. Arrange the chicken, zucchini, onion, and cherry tomatoes, trying not to overlap them.
Place the tray in a convection oven at 356°F and bake for 25-30 minutes, depending on the thickness of the chicken slices.

Tips and Notes
If desired, you can add fresh herbs like basil or thyme.
I used chicken breast fillets, but classic slices or strips are also fine.
To oil the meat, you can use either extra virgin olive oil or peanut oil. You can also add grated Parmesan cheese to the breadcrumbs.
I recommend using small zucchini as they will cook faster and won’t release water.
