A very simple and quick to prepare main course, perfect for any occasion… Baked chicken thighs with potatoes and artichokes, tender and tasty. This time I used frozen artichoke hearts, but fresh artichokes are also great, you will just need a few more minutes to clean them. The thighs (skinless) are simply coated in breadcrumbs and flavored with aromatic herbs and garlic. Try this recipe, it’s easy but really delicious!

Ingredients
- 14 oz chicken (deboned thighs, skinless)
- 10 oz potatoes
- 5 artichoke hearts
- breadcrumbs
- herbs (to taste)
- garlic powder (to taste)
- extra virgin olive oil
- salt
- pepper

Preparation
Wash the potatoes, peel them and cut them into pieces.
Boil them in salted water, along with the artichoke hearts, for 5-7 minutes.
Drain and let them cool slightly.
After deboning and skinning them, pound the thighs to flatten them as much as possible.
Brush them with extra virgin olive oil, then coat with breadcrumbs, flavored with aromatic herbs and garlic.
Line a large baking tray with baking paper. Place the thighs and potato pieces in it. Salt, pepper and drizzle with a little oil (1).
Bake in a fan oven at 375°F for about 20 minutes, then add the artichoke halves to the same tray (2).
Bake again and continue cooking for another 10 minutes, until the meat is cooked and the potatoes are golden brown.

Advice and Notes
Instead of thighs, you can use drumsticks, with or without skin.
If you have fresh artichokes, previously washed and cleaned, you can use them.
