Citrus chicken slices, breaded and baked with sliced almonds… a simple and light recipe that is prepared very quickly. The chicken breast slices are first soaked in orange and lemon juice, then breaded with breadcrumbs, garlic, parsley, and grated citrus zest. Just place everything on a baking sheet and bake, and in a few minutes, you’ll serve a delicious and fragrant second course, perfect for dinner!

Ingredients
- 12.35 oz chicken breast (sliced)
- 1 orange
- 1 lemon
- to taste breadcrumbs
- garlic powder (or one clove of garlic)
- parsley (or other herbs)
- sliced almonds
- extra virgin olive oil
- salt
- pepper

- Grater
- Citrus juicer
- Parchment paper
Preparation
Grate the zest of half an orange and a lemon, mix them in a bowl with 3-4 tablespoons of breadcrumbs, a pinch of garlic (or one finely chopped clove), salt, pepper, and chopped parsley.
Squeeze the juice of the orange and lemon and pour it into a container. Add a drizzle of oil and mix.
Soak the chicken slices in the liquid and let them marinate for about 15 minutes (1).
Afterward, lightly drain the meat and coat it in the citrus-flavored breadcrumbs, making sure it sticks on both sides.
Line a large baking sheet with parchment paper and arrange the breaded slices on it. Drizzle them on top with a few drops of the marinating juice and a light drizzle of oil.
Finally, sprinkle them with sliced almonds (2). If desired, you can add some slices of orange and lemon.
Place the baking sheet in a ventilated oven at 375°F and bake for 15-20 minutes, depending on the thickness of the slices.

Tips and Notes
You can use only orange or only lemon. Choose organic or untreated citrus, so you can use the peel.
You can omit the almonds if you don’t like them, or replace them with chopped pistachios.
You may add other herbs, like thyme or oregano.
You can adapt the recipe to turkey breast or pork loin, adjusting the cooking times accordingly.
