A classic, very easy and very tasty recipe, which can be served as an appetizer, or alongside a fish barbecue, together with skewers, sole or prawns. Baked gratin scallops are very simple to make, ready in a few minutes, and everyone always loves them… here you will find my tried and tested recipe, the one I’ve been making for years and that suits every occasion!

Ingredients
- 4 scallops
- as needed white sandwich bread (or breadcrumbs)
- Half clove garlic (to taste)
- parsley
- lemon zest
- extra virgin olive oil
- butter
- salt
- pepper

- Paper towels
- Grater
Preparation
Clean the scallops: detach them from the shell, rinse them under running water to remove any sand residues, and pat them dry with paper towels. If you like, you can leave the coral or remove it.
Using a food processor, chop a slice of sandwich bread with garlic and a sprig of parsley.
Transfer the mixture to a bowl, add salt, pepper, a drizzle of extra virgin olive oil, and some grated lemon zest. Mix with a spoon.
Place the scallops back in the shells (also washed and dried). Sprinkle them with the aromatic mixture and add another light drizzle of oil on top.
Arrange them on a baking tray and place them in a fan oven at 375-400°F. Bake for about 10-12 minutes, then open the door and add a small knob of butter on each scallop.
Close the oven again and continue baking for another 2-3 minutes. If you want the crust to be more golden, you can turn on the grill.
The oven-baked gratin scallops are ready, add a little fresh chopped parsley if you like, and serve them hot… enjoy your meal!
Tips and Notes
You can add other herbs, such as thyme, marjoram, or chives.
Butter is not essential, but it makes the gratin tastier and less dry.
You can cover the scallops with more or less bread, according to your taste.
You can also use frozen scallops (thawing them before use). However, as always, I recommend choosing fresh ingredients.
