Baked pumpkin cutlets, tasty, light, and quick to prepare, perfect as a side dish. The recipe is very easy, you just have to cut the pumpkin into regular slices, oil it, and coat it in herb-flavored breadcrumbs. The cutlets will then bake in the oven for the time needed to make them tender inside but with a slightly crispy crust. Try this dish, it’s great to accompany all autumn menus!

Ingredients
- 10 1/2 oz pumpkin (already cleaned)
- to taste breadcrumbs
- garlic powder (to taste)
- herbs (thyme, oregano, rosemary or others)
- extra virgin olive oil
- salt

Preparation
Remove the seeds and peel from the pumpkin. Cut it into slices about 1/4 inch thick, using a sharp knife, a mandoline, or a slicer.
Pour 3-4 tablespoons of breadcrumbs into a tray, add a pinch of garlic (if desired) and a handful of dried herbs. If you like, you can also add some grated Parmesan.
Using a brush, coat the pumpkin slices with extra virgin olive oil on both sides.
Then coat them in breadcrumbs, making it adhere as much as possible.
Place the pumpkin cutlets on a baking tray lined with parchment paper.
Place the tray in a fan oven at 375-400°F and bake for about 20 minutes, or until the pumpkin is tender. Cooking times depend on the thickness of the slices and the power of the oven, as well as the type of pumpkin used.

Tips and Notes
Use a variety of pumpkin with firm and compact flesh, so that the slices remain intact and dry.
You can substitute olive oil with seed oil. You can flavor the breadcrumbs with thyme, oregano, marjoram, sage, rosemary, or other herbs as desired.
For cooking, you can also use an air fryer, making sure not to overlap the slices.
