Baked stuffed bread, an easy, quick, and delicious appetizer idea, perfect for all occasions, from parties to casual dinners. You just need a simple loaf of bread, cut it, and fill it with the ingredients you like best: in my case, I chose smoked scamorza cheese, olive pâté, sun-dried tomato pâté, and crushed chili peppers. A few minutes in the oven, enough to melt the cheese, and your bread will be ready… thanks to the cuts, each guest can pull apart a piece without needing a knife (hence the name “pull apart bread”). Ingredients
- 1 rustic bread (about 1 lb)
- 3.5 oz scamorza cheese (or other cheese)
- to taste olive pâté
- to taste sun-dried tomato pâté
- to taste chili peppers (in oil)
- herbs (as desired)

Preparation
Place the loaf on the cutting board and make deep perpendicular cuts, stopping before reaching the base.
You need to form a grid like the one you see in photo 1.
Open the spaces slightly and insert slices of scamorza and a few teaspoons of olive pâté, sun-dried tomato pâté, crushed chili peppers, or other sauces of your choice (2).
Transfer the stuffed bread to a baking tray and place it in a preheated oven at 340°F.
Bake for about 15 minutes, or until the scamorza cheese is melted and stringy.
Baked stuffed bread is ready, add some sprigs of thyme, rosemary, or other herbs if desired, then serve it hot.
Tips and Variations
You can use different types of bread, as long as they have a nice crispy crust and a soft interior. Durum wheat semolina bread or whole grain bread works well too.
You can stuff it with scamorza, provola, brie, emmental, or any other cheese you like.
You can add various pâtés like I did, or Genoese pesto, or a mixture of herbs and garlic. If you prefer, you can simply fill it with cheese and a selected cured meat (like cooked ham, salami, bacon…).
If your oven tends to dry out, you can wrap the loaf in aluminum foil for the first 10 minutes of baking.
