Ingredients

  • 5 oz whole milk
  • 1 egg
  • 2/3 cup all-purpose flour
  • 1 tsp instant yeast for savory preparations

  • After the time has passed, beat the egg white until stiff with a pinch of salt.

    Gently fold it into the batter, mixing from bottom to top (1).

  • Heat a non-stick pan greased with a little butter.

    Pour a spoonful of batter (2). When bubbles form and the base is set, flip the blini with a spatula and cook it on the other side (3). It will take 2-3 minutes in total.

    Continue until you finish the batter. If the pan is large enough, you can cook 3-4 blinis at a time.

  • Mix the cream cheese with a pinch of pepper and herbs to taste.

    Spread the blinis with the mixture, then place the slices of smoked salmon on top.

    If desired, garnish with desalted capers or pink peppercorns.
