Ingredients
- 2 bell peppers
- 3/4 cup rustic bread
- 2 tbsp tomato pulp
- Taggiasca olives (or black olives)
- salted capers
- extra virgin olive oil
- salt
- parsley
Tools
- Air Fryer
- Air Fryer Paper
- Bowl
Preparation
Wash the bell peppers, open them by removing the seeds and stalk, and cut them into slices.
Place them in the air fryer basket (with the appropriate paper if you have it), season with salt and drizzle with a little oil (1).
Cook them at 356°F for 10-12 minutes, until tender. At the end, remove them from the air fryer and drain the water they have released.
Cut the bread into cubes and place it in a bowl. Add the tomato pulp, 1-2 tablespoons of olives and capers (rinsed from salt), a handful of chopped parsley, a pinch of salt, and a drizzle of oil.
Mix the mixture well and fill the peppers, pressing slightly.
Place them back in the air fryer basket, drizzling a little more oil on the surface (2).
Cook them at 392°F for 5 minutes, so that the bread becomes crispy and golden (3). Always adjust the times based on your air fryer model.
Bread-stuffed gratin peppers are ready, you can serve them hot or at room temperature… enjoy your meal!
Tips and Notes
You can use rustic bread (stale bread is also fine), or sandwich bread.
You can add finely chopped anchovies to the filling.
Instead of tomato pulp, you can use fresh tomatoes cut into cubes, with the skin and seeds removed.
FAQ (Frequently Asked Questions)
Which peppers should I use?
The classic bell peppers you always find at the supermarket are fine, as long as they have firm and thick flesh, which can remain consistent after cooking.
Can I bake them in the oven?
Of course, you can bake them in a fan oven at 356-374°F, it will just take more time (about 20-25 minutes, depending on the type of peppers).
