Notes, tips, and variations
Add just enough broth to barely cover the beans, the cream should remain thick.
You can use either cotechino, zampone, or simply browned sausage. You can also use salami cut into cubes, as long as it’s not too aged.
You can replace cannellini beans with chickpeas, in the same amount.
You can serve the cannellini cream in glasses or small bowls, as an appetizer, or in deep plates, as a first course.
