A very quick yet truly delicious recipe, perfect as an appetizer or to quickly solve dinner when you have few ingredients at home and little time available. Carasau bread pizza is not a real pizza: Carasau bread is used instead of dough, then tomato sauce and mozzarella are added… with a sprinkle of Parmesan and a nice drizzle of oil the “pizza” is ready to be baked! Thanks to the liquid released by tomato and mozzarella, the bread softens in the center and forms a light crust along the edges… try this recipe, I assure you it is very tasty!

Ingredients

  • 5.3 oz carasau bread
  • 2 cups tomato puree (or fine pulp)
  • 8.8 oz mozzarella
  • grated Parmesan
  • basil
  • oregano
  • chili (to taste)
  • extra virgin olive oil
  • salt

Tools

  • Baking dish or pizza tray
  • Bowl
  • Cutting board

Preparation

  • Slice the mozzarella and let it drain for a few minutes.

    Pour the tomato puree into a bowl and season it with a drizzle of oil, a pinch of salt, oregano, and chili to taste.

    If using tomato pulp, pour it into a small saucepan and let it thicken over low heat for 5-6 minutes.

  • Take a large baking dish (about 11 inches) and grease the bottom with a thin layer of tomato sauce.

    Arrange a layer of carasau bread, broken into large pieces.

  • Add a few tablespoons of tomato and about half of the mozzarella (1).

    Then form a second layer of carasau (2).

  • Cover with the remaining tomato and mozzarella, drizzle with extra virgin olive oil, and sprinkle with grated Parmesan or other aged cheese to taste (3).

  • Place the tray in a fan oven at 356-374°F and bake for about 15 minutes, or until the mozzarella has melted and the bread has softened.

  • Your carasau bread pizza is ready, serve it hot, optionally adding a few leaves of fresh basil.

Tips and Notes

If you prefer, you can use a narrower tray and make three layers instead of two.

You can flavor the tomato with a clove of garlic and other herbs to taste.

You can replace mozzarella with provola or scamorza. You can also add other ingredients between the layers, like cooked ham, olives, mushrooms, or vegetables.
