Notes and Tips
During the holiday season, you can use pandoro. If you don’t have sponge cake, classic ladyfingers will do.
You can add a splash of liqueur to the orange juice, such as Cointreau, rum, or other of your choice.
You can make the dessert in a large dish instead of glasses.
Before whipping, make sure the cream is very cold from the refrigerator. I recommend chilling the bowl and beaters too.
You can prepare the cassata by the spoon the day before (except for decoration) and store it in the fridge.
