Chicken bites breaded with corn flakes, an extremely easy recipe to prepare, that everyone will really enjoy. The process is the classic one for cutlets, but bread crumbs are replaced with crushed corn flakes… this way, you get much crunchier and tastier bites. Air fryer cooking allows you to achieve a result similar to frying, using little oil and saving time. If you don’t have one, you can use the oven (instructions below).   • 9.17 oz chicken breast
  • 1 egg (large)
  • 1 tbsp milk
  • 2 tbsps flour
  • to taste corn flakes (unsweetened)
  • extra virgin olive oil
  • salt

Preparation

  • Clean the chicken breast by removing bones, tendons, or fatty parts. Cut it into bites of the same size.

  • Beat the egg in a bowl along with a tablespoon of milk.

    Place the flour in a second bowl, and in another some crushed corn flakes with your hands (1).

  • Coat each piece of chicken first in flour, then in the beaten egg, and finally in the corn flakes. Try to make them adhere well all over the surface.

  • Place the breaded bites in the basket of the air fryer, without overlapping them (2).

    Finally, spray or brush them with a little extra virgin olive oil.

  • Insert the basket and cook the bites at 375°F for about 9 minutes. Halfway through, turn them very gently and check them; the cooking depends on the fryer model and the size of the pieces.

    If you do not have an air fryer, you can cook them in the oven at 375-400°F for 18-20 minutes.

  • The chicken bites with corn flakes are ready, transfer them to a platter and salt them on the surface. Serve hot, accompanied with mayonnaise or other sauces.

Tips and Notes

For cooking, use the air fryer or the oven; I do not recommend frying the chicken in a pan because turning it would cause the corn flakes to come off.

Do not overlap the bites, otherwise, they will not be crispy and golden (if they do not all fit in the basket, cook them in 2-3 batches).

You can flavor the egg with sweet paprika or chopped herbs.
