I used green curry, but classic yellow curry found in supermarkets, garam masala, or other spice blends of your choice will do as well.
You can make the recipe with thighs, drumsticks, breast, or other parts of the chicken, as long as they are boneless and skinless. Turkey breast is also suitable.
