- 12 oz chicken breast
- 1.75 oz peeled almonds
- 1 lemon (untreated)
- 1 sprig rosemary
- rice flour (or all-purpose flour)
- extra virgin olive oil

Preparation
Place the almonds in a non-stick skillet and toast them for a few minutes, stirring continuously to prevent them from burning.
Once ready, set them aside on a plate. You can leave them whole or roughly chop them, as you prefer.
Clean the chicken breast by removing tendons, fatty parts, and small bones. Cut the meat into pieces and coat them in rice flour.
Heat a large skillet with a drizzle of oil and a small piece of butter. Add the chicken and brown it for a few minutes over high heat, then season with salt and pepper (1).
Add the grated lemon zest and a couple of tablespoons of its juice, also add the almonds and continue cooking (2).
If the base becomes too dry, moisten with hot water or broth.
When the meat is cooked, flavor it with chopped rosemary and turn off the stove.
