Ingredients
- 10.58 oz chicken breast
- 7.05 oz radicchio
- 1.76 oz speck
- Half glass white wine
- remilled durum wheat semolina (or flour)
- extra virgin olive oil
- salt
- pepper
- aromatic herbs (to taste)

Preparation
Clean the radicchio, wash and dry it, then cut it into strips.
Put it in a pan with a drizzle of oil, add salt and cook it for a few minutes. When it has wilted, add the speck, let it flavor for a minute or two, then turn off and set aside (1).
Cut the chicken breast into bites (after removing any bones or nerves) and pass it in the semolina.
Brown it in the pan with a little oil and a pinch of salt (2).
Deglaze with white wine, then add the radicchio and speck. If the cooking base is too dry, moisten with a little hot water or broth.
Continue cooking for a few more minutes, depending on the size of the bites. Flavor to taste with thyme, oregano, parsley, or other aromatic herbs.
Chicken breast with radicchio and speck is ready to be served at the table.
Tips and Notes
You can use either whole chicken breast or pre-sliced pieces. You can also replace it with turkey breast.
You can replace speck with smoked bacon or cooked ham.
You can use different varieties of red radicchio (early, late, Chioggia, etc.).
