Ingredients

  • 10.58 oz ground chicken
  • 1 zucchini
  • 1 carrot
  • 1 egg
  • 3.53 oz white sandwich bread
  • 1 clove garlic (to taste)
  • parsley
  • 1 tbsp Grana Padano grated cheese (to taste)
  • as needed breadcrumbs
  • extra virgin olive oil
  • salt

Tools

  • Bowl
  • Grater
  • Pan
  • Baking tray
  • Food processor

Preparation

  • Wash the zucchini, peel the carrot. Grate them with a coarse grater (or with a food processor) and place them in a pan (1).

Add a drizzle of oil, a pinch of salt, and cook them for 5 minutes, stirring frequently, so they release their water.

Once ready, transfer them to a bowl and let them cool.

  • With a small mixer, chop the sandwich bread with the garlic and a tuft of parsley.

Add the mixture to the vegetables and also the ground meat (2).

  • Add the egg, slightly beaten, a pinch of salt, and the Grana Padano, if you like.

Mix the ingredients and adjust the consistency with a little breadcrumbs if necessary.

Now form medium-sized meatballs, slightly flattened. Coat them in breadcrumbs and place them on a baking tray lined with parchment paper (3).

  • Drizzle the meatballs with a bit of oil and bake them at 375-400°F for 20-25 minutes, turning them halfway through.

Adjust the time based on the size of the meatballs and the characteristics of your oven.

  • The chicken meatballs with zucchini and carrots are ready, serve them hot or warm, as a delightful main course.
