Chicken rolls with eggplant, ham, and provolone… very simple and tasty, baked with a light breading. They are prepared in a few minutes and are perfect as a main course; you just need to bake the eggplant slices (or grill them) and use them to stuff the chicken along with the other ingredients. Ingredients
- 8.8 oz chicken breast (thinly sliced)
- Half eggplant
- 3.5 oz cooked ham
- 1.4 oz provolone
- 1 tablespoon breadcrumbs
- aromatic herbs (to taste)
- extra virgin olive oil
- salt

- Parchment paper
- Kitchen twine
- Bowl
- Cutting board
Preparation
Wash the eggplant and slice it fairly thin (about 1/8-3/16 inches).
Place them on a baking tray lined with parchment paper, adding a pinch of salt and a drizzle of oil on top.
Bake in a fan oven at 340-355°F for 10-15 minutes, or until tender.
Arrange the chicken slices on a cutting board and lightly salt them.
On each slice, place a slice of ham, a slice of eggplant, and a piece (or thin slice) of provolone (1).
Roll the chicken to form rolls, then tie them with kitchen twine (2).
Brush them with extra virgin olive oil, then roll them in the breadcrumbs, mixed with a pinch of salt and aromatic herbs to taste (3).
Place the rolls on a baking tray lined with parchment paper (you can reuse the one from the eggplants).
Bake in a fan oven at 355°F for 20-25 minutes, depending on the thickness of the meat.

Tips and Variations
You can dice the other half of the eggplant and cook it in a pan with oil and garlic, it will be perfect to accompany the rolls.
