Ingredients
- 10.6 oz chicken breast (sliced)
- 2 artichokes
- 2.8 oz cooked ham
- 1.4 oz provolone (or scamorza, sliced)
- garlic (to taste)
- all-purpose flour (or rice flour)
- extra virgin olive oil
- salt
- pepper
- herbs (to taste)
Tools
- Pan
- Pot
- Colander
- Bowl
- Chopping board
Preparation
Clean the artichokes by removing the outer leaves, tips, and inner fluff, if present. As you clean them, cut them into wedges and immerse them in water and lemon juice.
If you have the stems, peel them and save them for other preparations, as they won’t be needed in this recipe.
Boil the artichokes in slightly salted boiling water for about 10 minutes, drain them, and season with oil, salt, and a pinch of garlic powder, if desired.
Alternatively, you can cook them in a pan with a drizzle of oil and a bit of hot water or broth.
Take the chicken slices and lightly pound them if necessary. Flour them on both sides, then brown them in a pan with a drizzle of oil, season with salt and pepper (1).
Place the cooked ham and provolone on each slice (2). Moisten the base with a little water or broth, cover with a lid, and let cook for a few minutes until the cheese has melted.
Finally, add the artichokes, placing them on top of the cheese (3). Continue cooking for a few moments so that the artichokes warm up and season the meat.
The chicken scaloppine with artichokes, ham, and cheese are ready, serve them hot, drizzling with the cooking juices. If desired, sprinkle with herbs like thyme or marjoram.
Tips and Notes
You can use provolone, white or smoked scamorza, fontina, or even Emmental.
You can replace cooked ham with speck.
Adjust cooking times based on the thickness of the chicken slices.
