Notes and Variations
Cooking times depend on the cut of the meat and the thickness of the slices; if you use chicken breast, the cooking will be faster compared to thighs.
Let the slices cook on the meat side, otherwise the speck will lose its tenderness. Use a spoon to take some of the cooking juices and pour it over the surface to ensure even cooking.
