Preparation
Place the 8 eggs in a pot and cover with cold water. Put on the stove and cook for about 8-9 minutes from the moment the water boils.
Run the pot under cold running water to cool the eggs completely, then peel them carefully so you don’t break them.
Dissolve the turmeric powder in a container with water. Stir, immerse the 2 hard-boiled eggs and let them rest in the refrigerator for about 4 hours.
With the immersion blender, puree the beetroot with some water until you obtain a smooth cream. Immerse 2 hard-boiled eggs in it and let them rest in the refrigerator for about 4 hours.
Place the fresh spinach (cleaned and washed) in a container with water and blend until you obtain a cream. Immerse 2 hard-boiled eggs and let them rest for 4 hours in the refrigerator.
Take the leaves of the purple cabbage, preferably the outer ones (they are more pigmented), wash them and cook them for about 20 minutes in boiling water.
Let the liquid cool slightly and strain it into a bowl. Immerse 2 hard-boiled eggs and let them rest for 4 hours in the refrigerator.
After the 4 hours, check that the eggs have taken on color (if necessary you can leave them in the liquid longer), rinse them and dry them with kitchen paper.
You can serve them immediately, or store them again in the refrigerator. Keep them in separate containers by color to avoid color transfer.
Tips and notes
The intensity of the coloring varies depending on the resting time. For a pale color 2-3 hours is sufficient; for a more intense color you will need 4-6 hours.
The flavor of the eggs is not altered by the vegetables or spices used.

Can I use food coloring?
Of course, if you prefer you can use food coloring. I recommend choosing gels, which give a more intense color.
