Dove muffins, delicious and very easy to make, with the aroma and flavor of the classic Easter dove cake. They are beautiful to present and give as gifts, but they are very quick to prepare, as they rise directly in the oven with regular baking powder. I decorated them with whole almonds and sugar crystals, and added candied fruit to the dough, which you can omit if you don’t like it. Ingredients
- 1 1/2 cups all-purpose flour
- 1 egg
- 2/3 cups sugar
- 1/2 tablespoon honey
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 1/2 teaspoons baking powder
- 1/4 cup candied fruits (to taste)
- 1 teaspoon almond flavoring
- orange zest (or lemon zest)

Preparation
Break the egg into a bowl, add the sugar and honey. Mix well using the mixer.
Add the almond flavoring, the zest of half an orange, the vegetable oil, and the milk, continuing to mix with the whisks.
Then add the sifted flour and baking powder, incorporating them gradually.
Once you have a smooth batter, add the candied fruits and stir with a spoon.
Divide the batter into 10 cupcake liners placed in the muffin tin. Fill them about 3/4 full to avoid overflow during baking.
Decorate the top with whole almonds (2-3 per muffin) and some sugar crystals (1).
Put everything in a static oven at 350°F (or convection at 340°F) and bake the muffins for 23-25 minutes (2). Adjust the time according to your oven, checking with a toothpick that they are dry in the center.
Your dove muffins are ready, remove them from the mold and let them cool well on a rack. If you like, you can sprinkle them with a little powdered sugar.
Tips and Notes
The muffins will stay soft for 2-3 days, in a covered container.
If you don’t have candied fruits, you can omit them or replace them with raisins or chocolate chips.
You can use wildflower honey or acacia honey.
