Tips and Variations
You can replace the cooked ham with prosciutto or speck, being careful not to over-salt the eggplants.
You can use either provola or smoked scamorza cheese.
If you don’t want to grill the eggplants, you can bake them with a pinch of salt and oil (340-355°F for 10-15 minutes). If they are a bit bitter (depending on the variety), let them soak with coarse salt first.
