Ingredients
- 1.3 lbs chicken breast
- 2 tbsp green olives
- 2 tbsp Taggiasca olives
- 10 cherry tomatoes
- 8 sun-dried tomatoes
- 1 clove garlic
- aromatic herbs (thyme, oregano, basil)
- rice flour (or other flour)
- Half glass white wine
- extra virgin olive oil

Preparation
Clean the chicken breast by removing tendons and small bones. Cut it into pieces and coat them in rice flour.
Heat a pan with a drizzle of extra virgin olive oil, add the chicken (1) and sear it for a few minutes, then transfer it to a plate and lightly salt it.
Deglaze the bottom of the pan with wine, add the sliced olives, garlic, cherry tomatoes, and chopped sun-dried tomatoes (2).
Let the mixture flavor at medium heat for 2-3 minutes, then add the chicken pieces (3).
Stir, moisten with a little hot water (or broth), and continue cooking for about ten minutes, adjusting based on the size of the pieces.
At the end, add a few leaves of thyme, oregano, basil, or other herbs as desired.
The flavorful chicken stew is ready, tender and tasty, to be served hot or warm.
Tips and Notes
You can use both the breast and other parts of the chicken, boned and skinned. In this case, extend the cooking time by a few minutes.
