Ingredients
- 8 slices fresh bacon (about 0.2 inches thick)
- 1 clove garlic
- 1.4 oz bread
- parsley
- aromatic herbs (to taste)
- chili pepper (to taste)
- salt
Tools
- Grill or non-stick pan
- 4 Toothpicks or skewers
- Food Processor
Preparation
Tear the bread into pieces and place it in a small mixer. Add the peeled garlic, a sprig of parsley, a pinch of chili pepper, and a handful of aromatic herbs to taste (thyme, oregano, rosemary, marjoram, or others).
Run the blades for a few seconds until you get a homogeneous mixture.
Place the bacon slices on a cutting board, lightly salt them, and sprinkle them with the chopped bread (1).
Roll them up and coat them with bread on the outside as well (2). Secure the rolls 2 by 2 with bamboo skewers, or individually with toothpicks.
Heat a grill or a non-stick pan and place the rolls on it, without adding oil (3).
Cook the rolls for about 10 minutes over medium heat, turning them a couple of times, until they are browned.
The fresh bacon rolls are ready, serve them hot as a second course, alone or together with other grilled meat.
Tips and Notes
You can flavor the breadcrumbs with your choice of herbs and spices. You can omit the garlic or use garlic powder.
You can add a drizzle of oil to the chopped bread, but I preferred not to add any fats other than the bacon.
