Fresh fava bean salad, a very simple, light, and nutritious dish, which I enriched with cheese and pan-fried golden croutons. Having very fresh and tender fava beans available, I used them raw, but if you prefer, you can cook them for a few minutes in boiling water and possibly peel them. This salad is tasty and quick to prepare, great for a nice spring menu, also to be served as an appetizer in small portions. Try the recipe, you can add other seasonal vegetables and aromatic herbs!

Ingredients

  • 2 slices rustic bread
  • 3.5 oz fava beans (fresh, shelled)
  • 2.5 oz Parmigiano Reggiano DOP (or pecorino)
  • 4 radishes
  • lettuce (a few leaves)
  • extra virgin olive oil
  • salt
  • pepper

Preparation

  • Cut the bread into cubes. Heat a non-stick skillet with a drizzle of oil, add the bread and brown it for a few minutes until it becomes crispy.

    Transfer it to a paper towel so it loses excess oil.

  • Wash a few leaves of lettuce, dry them, and tear them coarsely.

    Cut the cheese into cubes or shavings. I used Parmigiano, but pecorino or another aged cheese works well too.

  • Wash the radishes well and slice them thinly.

    Now take a large bowl (or two small ones), arrange the lettuce, radishes, shelled fava beans, cheese, and bread croutons.

  • Dress with extra virgin olive oil, ground black pepper, a pinch of salt, and mix everything. If desired, you can add a few mint leaves.

  • Your fresh fava bean salad with cheese and croutons is ready, excellent as an appetizer or a light second course.

Tips and Notes

If you do not like raw fava beans, you can blanch them in slightly salted water for 5 minutes.

Instead of aged cheese, you can use feta cut into cubes.

You can add a few slices of red Tropea onion. You can omit the radishes if you do not like them.
