A very simple but very tasty side dish that can be prepared in just a few minutes and can accompany all main courses. Gratinated Belgian endive, with a tasty mixture of breadcrumbs and herbs… it is quickly prepared and baked until a nice crunchy crust is obtained. An easy and light proposal, perfect if you have endive in the fridge and don’t want to eat it raw, as a salad. Try this recipe, it’s really quick and delicious!

Ingredients
- 2 heads Belgian endive
- 1 slice rustic bread
- 2 tbsps breadcrumbs
- 1 clove garlic
- aromatic herbs (parsley, oregano or others to taste)
- Grana Padano cheese grated (to taste)
- extra virgin olive oil
- salt
- pepper

- Parchment paper
- Mixer
Preparation
Wash the heads of endive and cut them in half lengthwise. Remove some leaves from the center so you have more space for the filling.
Remove the bread crust, break it into pieces and put it in the mixer. Add the leaves you removed, the garlic clove, and the aromatic herbs.
Chop for a few seconds, transfer the mixture to a bowl, then add the breadcrumbs, a pinch of salt and pepper, and a drizzle of oil.
Place the endive in a baking tray, lined with parchment paper, and lightly salt it.
Stuff it with the aromatic mixture, then sprinkle with grated Grana cheese (if desired) and another drizzle of oil.
Put the tray in a fan oven at 356-374°F and bake for 20-25 minutes, until the surface is gratinated to your taste. You can turn on the grill if necessary.
Gratinated Belgian endive is ready, serve it hot or warm, as a tasty side dish!
Tips and notes
You can add your preferred herbs, either fresh or dried. You can use garlic powder instead of the clove, or omit it altogether if you don’t like it.
You can use rustic bread, sandwich bread, or any bread you have at home, even slightly stale ones.
If you want a more flavorful breading, you can add some capers or even an anchovy fillet.
