A very simple side dish with fresh green beans, prepared in a few minutes, it’s tasty, appetizing, and goes well with all main courses. Green beans sautéed in a pan with garlic, oil, chili pepper, and a few mint leaves… to make them even tastier I added a handful of Taggiasca olives and a few drops of balsamic vinegar. Try this recipe, it’s easy, quick, and light!

Ingredients
- 1 lb green beans (green or yellow)
- 2 cloves garlic
- 1 pinch chili pepper
- mint (3-4 leaves)
- 2 tbsps Taggiasca olives (to taste)
- balsamic vinegar
- extra virgin olive oil
- salt

Preparation
Clean the green beans by removing both ends, then wash them thoroughly.
Boil them in salted boiling water for about 8-10 minutes, or until they are tender to your liking. Drain them and let them cool slightly.
Peel the garlic, chop it into pieces, and place it in a large pan. Add a drizzle of extra virgin olive oil, a pinch of chili pepper, and the olives, if desired (1).
Sauté for a moment, then add the green beans. Season with salt, add one or two tablespoons of balsamic vinegar, and the torn mint leaves (2).
Let them flavor over medium heat for 5-6 minutes, then turn off.
The sautéed green beans are ready, tasty and appetizing, excellent both warm and at room temperature.
Tips and Variations
If you like garlic, chop it finely, otherwise leave it in large pieces and remove it before adding the green beans.
You can use green, yellow, or even snow peas. Adjust the cooking times based on the quality, size, and your taste. You can steam them instead of boiling.
The addition of olives and balsamic is optional.
