Notes and Tips
For this recipe, it is necessary to use Tropea red onions (or any sweet onions), which do not need soaking. Being cut quite thin, they will be tender even without pre-cooking.
Depending on the size of your air fryer, you may need to cook the onions in multiple batches. I used this model, but oven-style fryers like this one work just as well.
You can enhance the breading with other herbs such as thyme or marjoram. If you follow a vegan diet, you can omit the Parmesan, the onions will still be tasty.
