The cocoa is meant to enhance the coffee flavor slightly, but if you don’t have it you can omit it.
The cream is the fresh liquid type for whipping, found in the refrigerated section. Do not use vegetable cream as it is already sweetened.
The indicated quantities are suitable for an 18-20 cm pan. To make a 24-26 cm diameter cake, you will need to double the quantities, using a full packet of baking powder (16 g).
