Melon and prosciutto skewers, a quick and tasty idea to serve the classic appetizer of prosciutto and melon. In this case, I added mozzarella fior di latte and some arugula leaves (or salad greens)… the skewers are very easy to make and also very practical to serve, especially if you have to organize a buffet or an outdoor lunch. To prepare them, you will need just a few minutes, simply get yourself an excellent sweet melon, like the Mantuan variety.

Ingredients
- 1 melon (Mantuan)
- 7.05 oz prosciutto crudo
- 10.58 oz mozzarella
- arugula (or salad greens)
- pepper (to taste)

Preparation
Cut the melon in half and remove the seeds using a spoon. Then cut it into wedges and remove the rind.
Drain the mozzarella from its liquid and cut it into chunks. If you prefer, you can use mozzarella balls and leave them whole.
Wash the arugula (or lettuce) and dry it well. Cut the melon slices into regular chunks.
Take some bamboo skewers, estimating 2 per person or 3 if you make them shorter.
Assemble the skewers alternating the melon with the mozzarella, the arugula, and the slices of prosciutto, folded or rolled.
If desired, you can add a pinch of black pepper only on the mozzarella.
Your melon and prosciutto skewers are ready, serve them at room temperature or cold. If you prepare them in advance, store them in the refrigerator, in a well-sealed container.
Tips and Variations
You can substitute mozzarella with feta cubes.
You can omit the arugula, or replace it with lettuce, basil leaves, or mint.
You can create melon balls using a melon baller.
To serve the skewers, you can stick them in half a melon, hollowed out.
